Ingredients

  • 1 kabocha squash, 2-3 lbs
  • 1 tbsp canola oil
  • 2 tbsp lemon juice
  • 1 tbsp reduced sodium soy sauce
  • 4 tbsp brown sugar
  • 1 tsp ground cinnamon
  • ¾ tsp ground ginger

Instructions

  • Preheat oven to 325 degrees. Cut squash from top to bottom into 1 to 1½ inch thick slices. Discard seeds and strings. Lay slices on an oiled baking sheet.
  • Combine the remaining oil with the rest of the ingredients and brush onto the squash. Bake for 20 minutes. Turn and brush again and bake till done, another 20-25 minutes. Brush again with marinade. If desired, broil the slices to brown them before serving.
