Ingredients
- 1 lb watercress
- ½ lb bay shrimp
- ¾ cup red onion, ¼ - inch diced
- ½ cup tomato, 1/4 - inch diced
Dressing
- ½ cup mayonnaise
- ½ lemon (squeeze for juice)
- 5 tsp sugar
- ¾ tsp dried dill weed or (½ tbsp fresh)
- ½ tsp salt, or to taste
- ¼ tsp pepper, or to taste
Instructions
- Wash and cut watercress into 1 inch pieces. Drain well.
- Combine watercress with bay shrimp, red onion and tomato in a bowl and let chill.
- Mix dressing ingredients and add to salad right before serving.
Notes
For a lower fat version, use low fat mayonnaise.
