Ingredients

  • 1 lb watercress
  • ½ lb bay shrimp
  • ¾ cup red onion, ¼ - inch diced
  • ½ cup tomato, 1/4 - inch diced

Dressing

  • ½ cup mayonnaise
  • ½ lemon (squeeze for juice)
  • 5 tsp sugar
  • ¾ tsp dried dill weed or (½ tbsp fresh)
  • ½ tsp salt, or to taste
  • ¼ tsp pepper, or to taste

Instructions

  • Wash and cut watercress into 1 inch pieces. Drain well.
  • Combine watercress with bay shrimp, red onion and tomato in a bowl and let chill.
  • Mix dressing ingredients and add to salad right before serving.

Notes

For a lower fat version, use low fat mayonnaise.
