Ingredients

  • 5 cups Choy sum, chopped
  • 2 ½ cups Carrots, peeled, diced
  • ¾ cup Red onion, diced
  • 60 oz Stew meat
  • 10 cups 'Ulu, peeled, cored, cooked
  • 16 oz Poi
  • 2 tsp Olive oil
  • 3 tbsp Garlic, minced
  • 4 cups Beef broth
  • 1 tbsp Hawaiian salt

Instructions

  • Add measured stew meat to a mixing bowl with Hawaiian salt. Mix together until well coated and allow to sit for 10 minutes.
  • Wash and quarter your 'ulu (breadfruit). Cut out the core and cut into keiki sized chuncks. Boil for 5 minutes, strain then set aside.
  • Meanwhile, finely chop garlic and dice onion, set aside.
  • Slice choy sum and dice carrots, then set aside.
  • Heat oil in a pot on medium high heat and add stew meat, searing on all sides.
  • Add garlic and onion to the pot. Add half of the beef broth and simmer on medium high heat till the meat is tender.
  • Then add carrots, choy sum and remaining beef broth, bring to a simmer. Contents of the pot should be mostly covered by the broth, if not add some water or more broth.
  • Simmer until carrots are tender, then add 'ulu and poi.
  • Simmer on low for 10 minutes and serve warm,

Notes

Pro Tip: Thickening your stew with poi is an 'ono, delicious, old school hack! And subbing 'ulu, breadfruit, for potatoes is just as savvy.
