Ingredients

  • 2 ½ cups Onions, chopped
  • 2 ½ cups Tomato, chopped
  • 10 cloves Garlic
  • 40 oz Chicken broth, low sodium
  • 1 ¼ lb Pork butt, boneless, ¼" trim
  • ½ cup + 2 tbsp Dried shrimp (optional)
  • 5 cups Long beans, chopped
  • 5 cups Japanese eggplant, chopped

Instructions

  • Chop onion and garlic. Cut pork into ½" pieces.
  • First, sauté the onion and garlic in a pan with oil.
  • Then add pork and sauté for another 2-3 minutes.
  • Add the fish sauce, dried shrimp, tomato, and chicken broth to the pan. Let simmer for 5-7 minutes, stirring occasionally.
  • Meanwhile, cut eggplant and long beans into ½" pieces.
  • Add vegetables to pot and simmer for another 4 minutes or until veggies are tender.
  • Serve warm with a side of rice.
