Ingredients
- 2 ½ cups Onions, chopped
- 2 ½ cups Tomato, chopped
- 10 cloves Garlic
- 40 oz Chicken broth, low sodium
- 1 ¼ lb Pork butt, boneless, ¼" trim
- ½ cup + 2 tbsp Dried shrimp (optional)
- 5 cups Long beans, chopped
- 5 cups Japanese eggplant, chopped
Instructions
- Chop onion and garlic. Cut pork into ½" pieces.
- First, sauté the onion and garlic in a pan with oil.
- Then add pork and sauté for another 2-3 minutes.
- Add the fish sauce, dried shrimp, tomato, and chicken broth to the pan. Let simmer for 5-7 minutes, stirring occasionally.
- Meanwhile, cut eggplant and long beans into ½" pieces.
- Add vegetables to pot and simmer for another 4 minutes or until veggies are tender.
- Serve warm with a side of rice.
