Ingredients

  • 2 cups mango, ripe local, peeled and cubed
  • 2 tbsp rice vinegar
  • 2 tbsp raisins
  • 1 tbsp honey
  • 2 tsp ginger, fresh minced
  • 1 tsp garlic, minced
  • 1 dash cayenne powder
  • 1 tbsp cilantro, minced
  • ½ tsp cinnamon, allspice, or garam masala

Instructions

  • Combine all ingredients in a small pot and bring to a boil.
  • Reduce heat and simmer for 5 to 10 minutes.
  • Break up mixture with a potato masher or a fork.
  • Cool. Adjust seasonings to taste.
