Grilled Pork with Noodles

Ingredients
- 8 oz vermicelli noodles
- 1 lb pork tenderloin
- 1 cup Manoa lettuce, chopped
Marinade
- 5 tbsp Vietnamese fish sauce
- 1 tbsp honey
- 3 tbsp green onion, chopped
- 2 tsp peanut oil
- 1 tsp sugar
- 1 tbsp shoyu (soy sauce)
- 2 tbsp garlic, minced
- ⅛ tsp black pepper
Garnish
- 8 leaves basil, chopped
- 8 leaves mint, chopped
- 1 Tbsp roasted peanuts, chopped
- 8 skewers
- 1 cup 1 cup nuoc mam (Vietnamese dipping sauce)
Instructions
- In a large bowl, combine ingredients for the marinade.
- Slice the pork into 2 inch cubes and marinate in the sauce for 15 minutes.
- Soak vermicelli in warm water for 5-10 minutes or until soft.
- Drain and set aside.
- Arrange the pork cubes onto skewers and grill for 5-7 minutes on each side, or until golden brown and cooked through.
- Lay the lettuce leaves on a plate. Place the vermicelli on top of the lettuce leaves.
- Serve the pork skewers with the vermicelli salad and garnish with basil, mint and peanuts.
- Serve with nuoc mam dipping sauce.
