Ingredients

  • 8 oz vermicelli noodles
  • 1 lb pork tenderloin
  • 1 cup Manoa lettuce, chopped

Marinade

  • 5 tbsp Vietnamese fish sauce
  • 1 tbsp honey
  • 3 tbsp green onion, chopped
  • 2 tsp peanut oil
  • 1 tsp sugar
  • 1 tbsp shoyu (soy sauce)
  • 2 tbsp garlic, minced
  • tsp black pepper

Garnish

  • 8 leaves basil, chopped
  • 8 leaves mint, chopped
  • 1 Tbsp roasted peanuts, chopped
  • 8 skewers
  • 1 cup 1 cup nuoc mam (Vietnamese dipping sauce)

Instructions

  • In a large bowl, combine ingredients for the marinade.
  • Slice the pork into 2 inch cubes and marinate in the sauce for 15 minutes.
  • Soak vermicelli in warm water for 5-10 minutes or until soft.
  • Drain and set aside.
  • Arrange the pork cubes onto skewers and grill for 5-7 minutes on each side, or until golden brown and cooked through.
  • Lay the lettuce leaves on a plate. Place the vermicelli on top of the lettuce leaves.
  • Serve the pork skewers with the vermicelli salad and garnish with basil, mint and peanuts.
  • Serve with nuoc mam dipping sauce.
