Braised Squash with Garlic

Ingredients
- 1 kabocha squash (1-1½ lbs)
- 2 tbsp olive oil
- 1 tbsp garlic, minced
- ⅛ cup water
- ⅛ cup chicken stock
- ½ tsp salt, or to taste
- ¼ tsp pepper, to taste
- 1 tbsp parsley, minced
Instructions
- Peel, seed, and chop squash into 1-inch cubes. Place olive oil in a large deep skillet and heat over medium high heat. Add squash and sauté till golden brown. Remove squash and drain oil from large pot leaving 1 tbsp.
- Return pot to stove. Add garlic and sauté till fragrant. Add liquids, reserved squash and cover. Cook till most of water evaporates. Do not stir squash.
- Season with salt, pepper, and parsley. Toss lightly then serve.
