Ingredients

large Okinawan sweet potatoes (approximately 9 cups)

tbsp
sugar
¼
cup
coconut milk
¼
cup
skim milk
Instructions
Boil whole sweet potatoes for 1 hour, or until tender. Cool.
Peel skin off sweet potatoes and mash.
In a medium bowl, gently fold in sugar, coconut milk and skim milk. Whip until fluffy.
Chill until ready to be served.
