Pork butt, boneless, ¼" trim

Instructions
Chop onion and garlic. Cut pork into ½" pieces.
First, sauté the onion and garlic in a pan with oil.
Then add pork and sauté for another 2-3 minutes.
Add the fish sauce, dried shrimp, tomato, and chicken broth to the pan. Let simmer for 5-7 minutes, stirring occasionally.
Meanwhile, cut eggplant and long beans into ½" pieces.
Add vegetables to pot and simmer for another 4 minutes or until veggies are tender.
Serve warm with a side of rice.
