Ingredients

mango, ripe local, peeled and cubed

rice vinegar

tbsp
raisins

tbsp
honey

tsp
ginger, fresh minced

tsp
garlic, minced

dash
cayenne powder

tbsp
cilantro, minced
½
tsp
cinnamon, allspice, or garam masala
Instructions
Combine all ingredients in a small pot and bring to a boil.
Reduce heat and simmer for 5 to 10 minutes.
Break up mixture with a potato masher or a fork.
Cool. Adjust seasonings to taste.
