Ingredients

  • 1 lb chicken breast
  • 8 bamboo skewers

Marinade

  • ½ cup coconut milk
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tbsp ginger, minced
  • 3 tbsp sugar
  • 1 tbsp yellow curry powder
  • 3 tbsp fish sauce
  • 1 tbsp vegetable oil
  • 1 tbsp dried lemongrass
  • 3 tbsp garlic
  • ½ tsp chili pepper

Instructions

  • Slice chicken breast into 2 inch strips.
  • In a medium bowl, mix the coconut milk, coriander, cumin, ginger, sugar, curry powder, fish sauce, vegetable oil, lemongrass, garlic, and chili pepper. Blend or food process the marinade until smooth for an even coating.
  • Marinate the chicken for 15 minutes.
  • Weave each chicken strip lengthwise, onto a bamboo skewer and broil or grill five minutes on each side.
