Ingredients
Dough
- 4 sheets Fillo (phyllo) dough, Athens brand
- 2 tbsp Margarine
- 1 tbsp Raw cane sugar
Cream
- 1½ cups Non-fat cottage cheese
- ½ cup Low-fat cream cheese
- 1 cup Low-fat yogurt
- 1 tsp Lemon zest
- 2 tbsp Lemon juice
- 1 tsp Vanilla
- 1 tsp Lemon flavor (optional)
- 3 tbsp Honey or agave nectar
- ⅛ tsp Guar gum (optional)
Fruit
- 2 cups Fresh fruit of choice
Instructions
- Bloom gelatin in ¼ cup milk for 5 minutes (soak gelatin in the milk).
- Bring remaining milk to a boil.
- Add dissolved gelatin to boiling milk, stirring.
- Turn off heat, stir in cream cheese till melted.
- Pour mixture into a mixing bowl.
- Whisk in honey, orange juice and vanilla.
- Pour ¼ cup into each papaya.
- Refrigerate till set, about 2 hours.
- Cover with plastic wrap and let rest overnight.
- Top with mint leaves and diced fresh fruit if desired.
Notes
*Tip: Before filling, make sure papaya halves sit level by slicing the bottom to create a flat surface if necessary.
